People always ask, what is hogget? It refers to the meat from animals between 2-4 years old. This is the best meat in our opinion, from animals that have fully matured on organic, re-mineralized pasture. The size and flavor of the meat is at its peak and retains the tenderness of younger animals when cooked in a slow roast or braise.
Our lamb is from animals that are 15 months old, technically called "yearling lamb." Again, we believe the older animals produce the best flavor and make good sized portions for our small breed of sheep.
